Sausage Pasta with Arabiatta sauce

Serves :- 4
Takes: - 20 minutes

  • 8 good quality sausages, preferably with garlicky flavours
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped finely
  • 1 can (19 oz.) tomatoes with herbs and spices crushed in the food
  • processor/blender
  • 1 tsp red pepper flakes
  • 1 Tbsp brown sugar
  • Salt and ground black pepper to taste
  • Fresh Basil
  • Fresh grated Parmesan

Fry or grill the sausages, allow to cool slightly and cut each one into bite size pieces, about 4 per sausage.

Heat the oil in a sauté pan. Fry the garlic and onion until softened, taking care not to burn the garlic. Add the tomatoes and stir well.

Add red pepper flakes, sugar, salt, and pepper. Stir well and bring sauce to a boil. Add the sausages and simmer gently until sauce has thickened to desired consistency. Add a little more sugar if the sauce is too acidic.

Mix with cooked penne, and serve topped with fresh basil and parmesan.
